Hourglass produced their first vintage in 1997 and for many years their entire production was from a single 4 acre vineyard just north of St. Helena. Today, they own two vineyards – the original estate Hourglass Vineyard, purchased in 1975, and the Blueline Vineyard in the Calistoga sub appellation, purchased in 2006. Pairing the wisdom, skill and artistry of the winemaking team and the soul of these dramatic vineyards, Hourglass wines are modern and elegant expressions that capture the essence of these expressive places of origin in every bottle. 

The 2021 Blueline Cabernet toes a perfect line of elegance, brightness, and power.  Initial aromatics show ground coffee, wet gravel, forest ferns and toasted oak barrel, which meld seamlessly into the rich, dark fruit tones. Cassis and pomegranate flavours emerge on the palate, where silky tannins are deftly countered by the tensional energy of natural, mouthwatering acidity and the trademark Blueline minerality. The refined tannins provide structure and support, lending weight to the wine's profile, all while maintaining its elegant precision. 

Pair this wine with bone in rib-eye or slow braised beef short rib.

The 2021 Cabernet Sauvignon Blueline Estate is a mostly co-fermented mix of 80% Cabernet Sauvignon, 10% Petit Verdot, 7% Malbec, and the rest Cabernet Franc. Blackcurrants, bright black cherries, violets, and bouquet garni, as well as beautifully integrated oak, all define the aromatics, and it's medium to full-bodied on the palate, with a pure, elegant, yet concentrated style. It shows the denser, concentrated style of the vintage, yet it also holds onto a beautiful sense of finesse and elegance. There are 850 cases of this beauty, which is going to benefit from 2-3 years of bottle age and evolve for 20-25 years.
