Founded in 1971 by Véronique and Aimé Guibert, Mas de Daumas Gassac carries forward a winemaking legacy that dates back 13 centuries to the monks of Aniane Abbey. Véronique and Aimé established the estate with a deep respect for the terroir. Since Aimé’s passing in 2016, their sons—Samuel, Gaël, Roman, Amélien, and Basile—have taken over its management, each contributing their expertise while upholding the estate’s core philosophy: respect. Guided by this principle, they see themselves not as alchemists but as stewards of the land, dedicated to crafting wines that embody the wild beauty and complexity of the Haute Vallée du Gassac.
The 2021 vintage was defined by climatic challenges, leading to one of the lowest natural yields in the history of Mas de Daumas Gassac Rouge.
Rich and full-bodied, this wine opens with aromas of cassis, leather, and subtle mineral undertones. The palate is dry and structured, showcasing vibrant red fruit and warm spice, framed by firm yet well-balanced tannins. A core of dark, ripe fruit lends depth and elegance, unfolding across the velvety texture that feels both dense and refined. The long, smoky finish hints at the wine’s remarkable aging potential.
Ideal for pairing with rich, flavourful dishes, particularly red meats like lamb, game, and aged cheeses. For the best experience, decant before serving to fully reveal its depth and complexity.

This product is part of an exclusive LCBO release this Spring - Limited quantities are available to order through NPW, offer closes March 5th
Francisco Baettig and Carlos de Carlos cut their teeth in the wine industry as part of the well known Errázuriz operation, where they worked together for many years. Inspired by their mutual love of Chardonnay and Pinot Noir, the talented enologist and savvy businessman branched out to create Vinos Baettig. Produced in small batches and sold as limited editions to selected buyers, their wines have swiftly become some of the most interesting & highly lauded among the emerging talents of Chile.
The newest addition to the Baettig fold, this unique wine is sourced from a combination of parcels from cool areas located in the Coastal Range of D.O Maule that deliver lively wines with tremendous fruit intensity. Los Compadres (co-fathers) refers to the friendship and partnership with growers of old vine Cabernet Sauvignon that have trusted Vinos Baettig with grapes coming from the best lots of dry farmed vineyards. These special parcels are close in term of quality and style providing different components to Vinos Baettig Cabernet Sauvignon.
The wine opens up with alluring aromas of blackcurrants and raspberries, quickly allowing notes of mint leaves and cigar box to unfold alongside the fruit. Full-bodied on the palate without feeling heavy, there's excellent concentration of ripe fruit, tea leaves and black olive tapenade that tempers the sturdy tannins. Sprightly acidity underscores the wine with freshness and helps carry the fruit and gentle spices into the finish.
The robustness of Cab Sauv will match nicely with meat-based pasta dishes such as lasagna, baked ziti or ragu/bolognese sauce.
