Rich & Sweet

Jurançon is a very small wine region located in the Pyrenees, famous for its sweet wines made with late harvested grapes. The grapes are hand-harvested later in the season when the sugar levels are really high and the water content is very low. The delicate honey and herb-tinged nose is enticing, with a sweet edge. It has a lovely rich texture with notes of straw and herb on the palate and good balance with a honeyed sweetness.

This is the wine you want to open at the very beginning or at the very end of a dinner. It matches beautifully with all kinds of cheeses, specially goat and blue cheeses; as well as with foie-grass. It is also terrific as a dessert wine.

Mineral & Zesty

Château de La Chaize is among the oldest, most historic estates in Burgundy’s Beaujolais region. Cared for by the same family for nearly three and a half centuries, the estate has been passed on to new owners, the Gruy family, who are equally committed to managing the estate with the utmost care, while implementing an ambitious environmental plan.

Pouilly-Fuissé lies in southern Burgundy’s Maconnais region and is produced only from Chardonnay grapes. Vineyards are planted on hillsides containing limestone-rich clay soils with a granitic subsoil. The appellation was established in 1936 and covers roughly 800 ha at altitudes around 200 - 300m a.s.l. Wines tend to be full-bodied, ripe and elegant.

For this wine, the grapes were hand harvested from a selection of different vineyard sites within Pouilly-Fuissé from ~50-year-old vines. Traditional fermentation takes place at a low temperature (62.6° F), and malolactic fermentation is blocked.
50% of the wine is aged in stainless steel, 50% in foudres.

Notes of citrus, iodine and flowers on the nose, while on the palate the wine is balances bright acidity and minerality with an ample body and yellow fruits and spice flavours.

Domaine Charly Nicolle was created with less than one hectare in 1979 by Robert Nicolle and Josette Laroche, who can both trace their winemaking heritage in Fleys back to the late 19th century. Since the creation of the Domaine, they have increased the size of their vineyards bit by bit, and today the Domaine produces wine from 20 hectares of vines. In 1999, they were joined by their son Charly, who had just graduated from the lycée viticole. Charly is now officially in charge of the Domaine, together with his wife Lucie, but Robert is still out in the vines nearly every day. The largest holdings of the Domaine are in AOC Chablis, located mostly around the family's beloved village of Fleys.

This name also symbolizes the transformation of daily efforts into extraordinary pleasures. Sourced from parcels on the right bank of the Serein River in the heart of Chablis, the Per Aspera stands out for its remarkable balance and artisanal character.

The wine displays an enchanting nose, bursting with intoxicating aromas of summer flowers and ripe fruit. On the palate, its distinctive character is reminiscent of oysters and seashells, adding a unique and refined touch to its profile. 

Rich & Mineral

Nicolas Potel is an iconic producer in Burgundy. He grew up in a family dedicated entirely to wine; and after gaining some experience internationally, he started his own project in the late 90's.

Founded in 2009, Maison Roche de Bellene offers a complete range of wines, with an emphasis on individual terroirs from vieilles vignes (old vines - 40 years or older) that are farmed responsibly. All of the growers that Nicolas Potel works with are either organic certified or farming according to the principles of lutte raisonée (“sustainable viticulture”). This enables Potel to consistently produce the expressive, terroir-driven style that is his vision.

The Saint-Véran appellation lies in the south of the Mâconnais region and its soils are full of fossiliferous limestone from the Middle Jurassic. After the grapes are manually harvested they undergo native yeast fermentation in barrel as well as 100% malolactic fermentation. The wine is then aged in French oak casks, of which 10% is new. It sees no bâtonnage and only a light fining and filtration occurs before bottling. 

Aromatically the wine is a touch brighter, with more spring white flowers and salty sea air on the nose. The palate is crisp, with crunchy orchard fruits, mineral driven acidity, and a mid-palate creaminess which balances the flavours out.
