3XP (Trois-X-P) - Pearce | Predhomme | Pender - is a small-production Niagara Peninsula Chardonnay collaboration that was started in 2015 by négociants Nicholas Pearce & Will Predhomme with vigneron Paul Pender.

The 2021 3XP is a blend of french oak barrels from mostly Tawse Estate all farmed using sustainable, organic and/or biodynamic practices. A large portion is from the infamous Quarry Road Vineyard blended with select barrels from other sites such as Limestone Ridge, Cherry Avenue and a small portion (8%) sourced from like minded sustainable growers.

We strive to show the delicacy, tension & purity of Ontario-grown Chardonnay with this small-production collaboration. Brilliant straw colour, youthful, light-intensity aromas of white peach, green apple, citrus, with delicate integrated subtle lees. Bright lemony & limestone acidity on the palate with a round & refreshing mouthfeel. A clean, fresh, textured... distinctly Ontarian-style Chardonnay.

Ideas for pairing 3XP? This full throttle Chardonnay calls for all shades of seafood and fish: spaghetti with clams and tons of parsley, halibut, crab cakes... or even pork tenderloin! It's also wonderful as an apéro wine.

Fresh & Balanced

Emblematically Niagara, this vibrant Chardonnay is made with organic, biodynamic and sustainably-farmed grapes from the Niagara Peninsula. The 2021 Crew Sauvage a blockbuster; 100% Tawse Estate fruit, mainly from the Robyn's Block young vines (2 Cadus puncheons, 4 barrels) which were showing best in the initial tastings with Moray and Jessica. This created the baseline for cuvée which was then blended with 3 beautifully balanced barrels from the Tawse Hillside vineyard and 2 immensely structured barrels from the Robyn's Block Old Vines parcel; the oldest Chard on the property. Et voila, another star is born.

Nicholas Pearce Crew Sauvage Pinot Noir VQA Niagara Peninsula 2021. The 2021 vintage is marked by elegance over power, brimming with brightness and approachability straight out of the gate, with not hard edges. Light ruby-red in the glass, high toned aromas of cherry, strawberry, pomegranate, backed by roasted herbs, spice and pepper. Great weight and poise for Ontario, but still the light to medium bodied Pinot Spectrum with balanced tannins and acids holding on to fine and lengthy finish.

Certainly a vintage on the edge, marked by many cold and wet days. However, as every mother does, mother (nature) kicked in and saved the day with a gloriously warm and dry finally to the cooler growing season.

Progression VQA Prince Edward County 2023.
A delicious expression of County sparkling wine. Fresh with buoyant acidity, this wine is made from our own Vidal grapes and has had a second fermentation using the Charmat method. The nose is loaded with white grapefruit and green apple peel. Well paired with anything from a hot sunny patio to pizza to oysters, or served well chilled as an aperitif.

Riesling VQA Prince Edward County 2022.
One of Lighthall's most aromatic wines, this off-dry Riesling is bursting with kiwi, starfruit, nectarine, and a lovely bouquet of white flowers. The classic Jolly-Rancher and crisp green apple punch follows through on the palate with vivacious acidity. Pairs excellently with spicy south-Asian cuisine, curries, and tacos.

Pinot Gris VQA Prince Edward County 2022.
True to Lighthall's style, this County Pinot Gris is both mineral driven and rich. Partially fermented in neutral French Oak with an Alsatian-sourced yeast strain, the classic notes of cantaloupe, pear, and nutmeg are all present. A waxy tone of salted apple-flambé and confit honeycomb bring a perception of sweetness to a delightfully bone-dry wine.

Chardonnay VQA Prince Edward County 2020.
As typically found in County Chardonnay, this wine starts with aromas of flinty minerality, Asian pear, and salted caramel. A round palate is filled with flavours of golden delicious apple, baking spices, and a hint of lemon. Put together, it’s like an apple crumble before it’s been baked! The smooth texture and long finish leave you satiating for more.

South Shore Pinot Noir VQA Prince Edward County 2021.
A cooler vintage brings freshness to one of the county’s best varieties. Strawberry, red currant, candied cherry, and a savoury garrigue all burst from the glass. Tones of sumac, cedar, bittersweet chocolate and cinnamon bark bring a discerning finish to this elegant grape. The classic pairing of seared duck breast and mushroom risotto are a must-have.

Merlot VQA Prince Edward County 2021.
Cool-climate Merlot at its best. This wine is loaded with all things blue and moody: damson plums, violet, fig, blue-acai, and chocolate-covered blueberry. Rich oak tones of vanilla, chocolate, and marshmallow balance out the fruit intensity and leave a long yet distinguished finish.

Mineral & Creamy

“The Farm” is a 10-acre vineyard in Niagara’s Twenty Mile Bench, planted to Pinot Noir. The property is rooted in traditions of gathering family & friends, and where Peter and Dora Neudorf call home.

Made from hand picked Chardonnay from the Beamsville Bench where the soil is rich in
limestone. Pressed whole cluster, wild fermented, aged in 50% stainless tanks and 50%
French oak Puncheons (500L barrels) for 16 months. During ageing the wine completed
Malolactic fermentation and was blended and bottled unfiltered in the farm cellar. 

This wine is vibrant with a chalky minerality – the wild ferment delivers layered notes of pear, lemon, honey and stone fruits. The finish is focused and complex.

Pair this creamy Chardonnay with any chicken dish, baked, grilled, or fried. It would also pair beautifully with seafood.

This classic county chardonnay has a beautiful baked lemon nose, with some flinty reduction characteristics. The lean palate offers notes of green apple, with its age adding layers of brown sugar. Mineral & Zesty

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

The 2022 The Fifty Chardonnay is a blend of three different vineyard with four different picking dates. 100% of this wine was fermented in concrete with spontaneous fermentation. Once fermentation was completed, the wine was aged on full lees in concrete for 8 months. After lees-aging, it was racked, lightly filtered, and bottled on September 7 th , 2023.

The 2022 vintage was beautiful, warm and sunny throughout, but with very small yields. As a result, wines are very concentrated with great acidity. The nose of this wine is full of pineapple, nectarine, red apple, and orange blossom followed up with lemon meringue and crème fraiche. The palate has a refreshing reflection of the nose, adding lemon-curd, peach blossom, and spice, but it also showcases a mineral and wet stone characteristic that leads to the long, elegant finish.

This wine will age well for the next 5-8 years. Enjoy with brie, sole meuniere, and lemon-roasted chicken.

Nutty & Waxy

Lighthall Vineyards is a small, proud, low volume and high quality winery located in enchanting Prince Edward County, Ontario, Canada. This wine is unmistakably County Pinot Gris. The aromas of pear and cantaloupe yogurt are delicate, rich, and inviting. The use of an Alsatian yeast strain and our method of partially fermenting in old French oak barrels give a smooth and rich mouthfeel, while the waxy finish of unctuous confit apple with a hint of nutmeg keep you coming back for more.

Choucroute garnie, foie gras, pork dishes, veal parmiggiano, chicken with cream sauces, and a traditional turkey dinner are all wonderful. Pizza bianca with a cream base, taleggio and pear is delightful, while meatier fish like halibut, cod, trout, or arctic char are ideal for the fish lovers. Chèvre and brie make great cheese options.

Leaning Post's goal for their Sauvignon Blanc is to reflect the unique Niagara terroir and this wine always delivers. 

Very intense tropical aromas of pineapple, passionfruit and mango lead to kiwi, lemongrass and lime-leaf on the nose. The palate has bright acidity matched by a creamy texture, with key-lime and starfruit battling with passionfruit for supremacy, while lemongrass and honeysuckle stand back and watch. The finish is the most surprising, with the flintiest, most “wet stones in a mountain stream” minerality we have ever seen on our Sauvignon Blanc!

Drink now or over the next 3 years. Enjoy with pan-fried halibut, fresh pesto; anchovy-paste pasta, or lemon herb roasted chicken.

This Melon de Bourgogne varietal wine presents a pale straw hue. The bouquet exhibits subtle notes of fresh mint, complemented by hints of lemon and stone fruit. On the palate, the wine displays a crisp acidity, with flavours of pear, nectarine, and peach unfolding in harmony. The 5-month ageing process in neutral oak imparts a refined character to the wine without overpowering its natural characteristics.

This Pinot Gris presents a straw-like hue with subtle grey undertones, characteristic of the varietal. The aromatic profile is dominated by notes of mint and minerality, with undertones of eucalyptus and a floral backbone that provides depth and complexity. The palate is light-bodied and refreshing, with citrus flavours of lemon and lime that linger pleasantly. The mouthfeel is lubricative, typical of Pinot Gris, leaving a clean and revitalizing finish.

Our Phillipston Road (Manchego-style) cheese is literally made for this wine. Rich, salty, and nutty, it makes a perfect match. Coquilles St. Jaques, Oysters Rockefeller, halibut, spaghetti cacio e pepe, zucchini ravioli with grated lemon zest, butter poached cod, and chicken with a cream sauce are all wonderful pairings.

Honeysuckle & Minerality

RR81 stands for 'Regional Road 81' - the road The Farm sits on, and a main artery through wine country. The RR81 approach to winemaking is simply fermented grapes with nothing added. One-off wines sourced from some of the best single vineyards in Niagara. These wines are made in the barn at The Farm with minimal intervention (just a few bins and an old basket press). The result equals some of the best, and most unique, wines coming out of Niagara.

Naturally fermented, unfined and unfiltered. The grapes were handpicked on October 5th, and fermented with whole cluster. It was then pressed into neutral French oak barrels and aged on primary lees. Only 4 barrels made.

Drinks like an early spring day, with swirling aromas of honeysuckle, sweet corn and fresh herbs intermingling in the sunshine. The nose is alluringly mineral, greeting you with an unapologetic ode to limestone.

This wine is a white varietal crafted from 100% Pinot Noir grapes, with zero skin contact to preserve its crisp characteristics. Displaying a pale peach hue, the bouquet presents aromas of baking spice, maraschino cherry, and nectarine. The palate showcases a lean and light mouthfeel, with a prominent expression of baking spice and uplifting minerality. Fermented in neutral oak barrels for five months, this wine underwent full malolactic fermentation, resulting in a refined and balanced finish.

This crushable summer-sipper is a blend of 43% Gewürztraminer, 43% Riesling and 14% Pinot Gris. The nose shows soft citrus, with a grapefruit focus. The palate is very clean with very approachable lemon and grapefruit flavours. It's an off-dry white, perfect to pair with aperitifs and spicy Thai cuisine.

The “Geekiness” continues to rise in this wine. An experiment in lees aging, this riesling ages 22 months on all the lees collected from all the white wine fermentations since vintage 2014.   Reductive notes of flint and mineral frame all the beautiful stone fruit and classic Riesling notes.   It has a wonderfully rich and creamy texture balanced by a distinct freshness. It is practically immortal and should age beautifully for the next decade and well beyond.

Creamy & Mineral

Husband and wife duo Ilya and Nadia started Leaning Post winery in Niagara over 10 years ago. Initially a virtual set up, the winery now located on Highway 8, has become a reference producer in Niagara.

Hand-picked and hand-sorted on September 15th, the grapes were gently whole-cluster pressed, and allowed to settle in tanks for several days prior to fermentation. The juice of Clone 96 was racked into barrels (2 puncheons; 2 barriques) for spontaneous alcoholic and malolactic fermentation, then aged in barrel for 18 months. After skillfully selecting the best barrel combination to highlight the unique characteristics of the clone, the 2020 Clone 96 Chardonnay was allowed to naturally settle before being bottled in June 2022.

This wine has incredible depth on the nose the evolves slowly, keeping interest as it unfolds. Tropical fruits like pineapple and mango lead to toasted almond and a sprinkle of sea salt.The palate has a rich and creamy texture followed by a delightful saline quality, the perfect balance of richness and brightness. The wet stone/mineral base is wrapped with lime zest and lemon curd with backing flavours of vanilla, cardamom, and cinnamon.The finish just goes on and on showing why this is a truly outstanding example of Senchuk Vineyard!

Zesty & Mineral

The 2019 Riesling is the epitome of what makes bench Riesling great. The nose explodes with beautiful lemon-rind, lime-leaf, nectarine, nutmeg, and honeysuckle aromas. Those flavours continue on the palate while adding green apple, honeycomb, cumin, white lilac and the distinctive chalky minerality of the Twenty Mile Bench. There is unusual weight and texture here, with a mouth-filling sensation that is not very common in Riesling. As the wine sweeps across the palate towards the finish, a bright green leafiness and flinty/gravelly appear in waves, leading to an amazing, crunchy finish. The wine will age well for the next decade.

Rieslings are great to pair with spicy Indian and Asian cuisines and do excellently alongside duck, pork, bacon, shrimp and crab.
