Mineral & Zesty

From a new family (relatively speaking) in Chablis, the estate belongs to Marie-Noëlle & Laurent Ternynck. They have deep roots in the surrounding area of AOC Burgundy, farming for multiple generations. 

This old vines Chardonnay is wild fermented fermented in stainless steel tanks, then ages “Sur Lee” for 12 months after malolactic fermentation is complete. The fruit is gathered from vineyards in Fleys and this area sits at a higher altitude on a windswept plateau, which helps maintain the acidity in the wine.  Fresh, floral and mineral on the nose. There are notes of fresh almond, hazelnut, citrus and white flowers on the palate. It is balanced, structured and texture example of classic favourite. 

Keep it chilled in the fridge, uncork it at the end of the day and pour yourself a glass! Also pairs well with oysters, all kinds of fish dishes, and roasted chicken.

The Maison Roche de Bellene offers a complete range of carefully cultivated and versatile wines, often made from old vines. All of the Maison wines are made with respect to sustainable and natural farming practices, with as little intervention as necessary to showcase their individual terroirs.

Crafted from vines that boast an average age of 48 years, this Bourgogne offers a pure expression of Chardonnay, characterized by its freshness and lifted aromas. Ripe citrus, apple, and subtle toasted notes interplay on the palate and are supported by mid-weight, creamy texture. The refined mineral undertone brings a precise Burgundian elegance, enhancing the overall complexity and balance of this classically styled wine. 

A nice option for pairing with grilled chicken or fish cakes served with lemon wedges and tartar sauce.

The Moreau family has been settled in the heart of Chablis since 1884. Louis Moreau, the sixth generation, studied oenology and viticulture in California and took over from his father when he returned to France in 1994. Nowadays, the Domaine's vineyards extend across the four levels of the appellation: Petit Chablis, Chablis, Premier Cru and Grand Cru.

Les Clos is the largest grand cru in Chablis and is considered the quintessential wine of the region for many. The site generally produces one of the most potent and longest-lived wines of the appellation and yet can be a pleasure to drink in its youth. 
Starting from 2013, the grapes from this parcel have been vinified and aged exclusively in stainless steel tanks, emphasizing the wine's polish and finesse to the fullest extent.

This wine captivates with its evocative mineral bouquet - an intricately woven tapestry crafted from the vineyard's distinguished terroir. Signature aromas of crushed flint and gentle sea breeze unfold between lifted floral scents and fresh stone fruits. The palate is carried effortlessly by a backbone of natural acidity, hinting at this wine's ability to further develop with age. 

This Grand Cru will nicely match with monkfish roast with nuts and smoked bacon.

This wine has a creamy, sweet scent with a lovely mix of fragrant white blossoms and citrusy aromas, accented by hints of lightly toasted spices. The palate offers a burst of crunchy orchard fruits that are enriched by flavours of acacia and hazelnuts. These flavours glide overtop a buttery soft texture and seamlessly integrate with gentle oak spices. The careful combination of lushness and vibrancy makes this wine both refined and spirited, achieving superb balance and great depth that leaves a lasting impression.
