About the Winery
Château de Parnay
Château de Parnay is the flagship of the AOC Saumur Champigny. The property is located along the Loire river, classified as UNESCO World Heritage, on the most reputable clay and limestone terroirs of the appellation. The historic property was taken over by Mathias Levron & Régis Vincenot in 2006 with the aim of restoring the nobility of this special place.
Drawing their strength from the authenticity of their values, they now cultivate 50 hectares of vines with the aim of producing exceptional wines in a way that respects the environment. They have been certified organic since 2013 and are about to be certified biodynamic too.
The Clos of Chemin des Murs is the jewel of the property! Coming from the imagination of it's orginal owner, Antoine Cristal, this Clos was built, planted and cultivated according to an unprecedented technique. On this half hectare of Chenin Blanc, each vine was planted on the north face of a stone wall. Through a hole in the stone the vine crosses through the wall and allowing the grapes to grow facing the southern sunshine. The vine is said to have its 'foot in the cool and belly in the sun'.

This leads with a terrific nose very much in the varietal/regional idiom, honeyed, floral, apple and lemon zest-scented, complex and exotic, not to mention stony. The palate displays a similar level of poise and composure, cool, transparent yet with a heavy freight of flavour , and terrific length. This is really quite extraordinary wine, delicious now, but surely capable of a decade or so in the cellar. Top notch. Tasted March 2019.

The rare and elusive 100 per cent chenin blanc from Samur makes full use of clay-calcaire-tuffeau soils for this dry and piqued white wine. So crunchy and expressive with an expansive character that fills the mouth by making contact withy every nerve and pour. Benchmark and controlled explosive example, rare or otherwise. Drink 2020-2025. Tasted March 2020.

It is rare to come across fine Saumur chenin, a central Loire Valley appellation overshadowed by Vouvray. This is mid-weight, dry and quite firm classic with a fairly generous nose of pear, spice, vague fresh herbs and wet stone. It becomes quite dry and somewhat grapefruity bitter on the finish, trailing solid minerality as well. Very good to excellent length. Tasted March 2020.

A deliciously leesy and liquid chalky melon de bourgogne that is simply what the doctor orders for those of modest means when they need a quenching after sucking back a briny oyster. This is like liquifying the shell as a chaser and with some mouthfeel to boot. Salty and just refined enough to do the bivalve molluscs pulled from marine or brackish habitats proud. Drink 2023-2025. Tasted February 2023.

This golden muscadet was made with fruit from vines that are more than 40 years old, planted on slopes facing south and south-east. It is relatively aromatic, perfumed with notes of honeysuckle, grapefruits, and toasted bread. The palate feels fleshy and rounded but also fresh and vibrant, and delicately salty. The finish is long-lasting, leaving flavours of citrus zest and a fine texture in its wake. I would pair this muscadet with subtly flavoured seafood, like mussels or oysters. This is from a leading Saumur producer of Loire chenin blanc with vines planted in calcerous clay soils near the Loire River outside of classical town. It is both rich and delicate, a juxtaposition I find in some of the world's best whites. It is not however an intense, flashy, acid and mineral driven chenin. Fermentation in neutral barrels has created a pale gold hue and softened the nose to gentle honeyed, spicy state along with ripe pear/apricot jam fruit. It is medium-full bodied, smooth and dry, almost creamy, with the grape's acidity and minerality arriving more on the finish. The complexity and length are excellent, with a touch of wood spice and bitterness as well. Tasted August 2022

Azienda Agricola Tessari
The Tessari family have Soave in their blood. For three generations they have been extracting delectable wine from the well cared for vines of their Monteforte d’Alpone vineyards. With only a little over a hectare of Garganega grapes in the prestigious volcanic solis of Soave Classico, Antonio Tessari hand dug his cellar back in 1933 and started the legacy that continues today with his grandchildren: Germano, Antonio and Cornelia.
From vineyard to bottle, these three siblings oversee it all; with unwavering respect for tradition, quality and passion for the art of winemaking. The volcanic soils of the hillside are rich with basaltic rocks and clays, which guarantees the health of the plant and the promotes the mineral and floral aromas that are characteristic of the Garganega grape. Truly artisanal wine making at it’s best.
Conti Riccati
Conti Riccati is located in the rolling hills outside of Castelfranco, Veneto; in the province of Treviso. Their vineyards extend along 20 hectares inside a bigger property that has belonged to the Riccati family since the 14th century.Valperto Azzoni, his wife along and their four children are the direct descendants of the Riccati family and have the same enthusiasm and respect for the land, that their ancestors had in the past.
Conti Riccati grows mostly Glera, Pinot Gris and Pinot Noir though they are most known for their Prosecco.
The winemaker, Salvatore Lovo and the agronomist, Giovanni Pascarella take great pride in making the wines and tending the vineyards for the family. They practice sustainable viticulture and are currently in organic conversion.
Cortonesi

Tommaso is third-generation winemaker at Cortonesi that owns some of the most prized vineyards in the north and south-east of Montalcino. Favourable geography, rocky soils, and ingenious winemaking all come together to create some of the region's deepest and most elegant Brunello wines.
The Cortonesi family has been making wine since the 1970s. At first, wines were made to be enjoyed by family, friends and neighbours, but then in 1985, Cortonesi had gained enough traction within their community that they began to offer their wines commercially. Today, Cortonesi remains a family business that continues to work according to tradition, while employing modern technologies to the enhance the quality of their production.
Lovers of Sangiovese must experience “La Mannella”, a collection of wines exclusively sourced from Cortonesi's private vine land. This farm covers 56 hectares, eight of which are devoted to the production of some of the world's most coveted and age-worthy Brunello di Montalcino.
Gilvesy Pincészet
Hungarian expat Róbert Gilvesy moved back to his homeland from Canada, and began building the Gilvesy winemaking empire on the former Esterházy estate on Szent György Hill. Thanks to years of hard work, the Hegymagas-based facility now includes a modern building complex and about 13 hectares of vineyards, in addition to being the home of the family. The area is shaped by 6 million years old volcanoes, where indigenous and international varieties grow organically.
Robert’s absolute admiration for nature and the terroir translates into an immense respect for the environment. By farming using organic practices, the soils and the vines stay healthy. In the winery, by letting nature take its course without controlling the processes, and using local resources, such as Hungarian oak barrels, Gilvesy promotes and protects the Balaton region.
Mas Carlot
Mas Carlot is situated in the south of the Rhône Valley, extending across 76 hectares of pebbly land southeast of Nîmes. Originally a 17th century farm, this beautiful estate was resurrected in the 1960's by the Blanc family—it is currently run Cyril Mares of the neighbouring and equally reputable property, Mas Bressades.
The appellation of Costières de Nîmes used to be considered part of eastern Languedoc but the climate, soil, topography and wine are far closer to those just over the river in the Southern Côtes du Rhône. It is now a region very much on the up and is widely recognized as a great source of excellent value wine.

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.
Radford Dale
Radford Dale and The Winery of Good Hope are two brands made by the same people, in the same winery. The team behind these wineries has been an industry leader since the 1990s in chemical free farming, and more recently in low and no sulfur winemaking. They are a founding member of PIWOSA (Premium Independent Wineries of South Africa) which sets ethical, environmental and social uplift standards. Recognizing the social inequality present in South Africa Radford Dale has also set up a trust called Land of Hope to help facilitate bright futures for children, focusing heavily on education.Alex Dale who owns and manages both projects is an Englishman who grew up spending summers in Burgundy, France. He moved there in his late teens to follow a passion for winemaking and also opened a wine bar in Beaune. He lived in Burgundy for many years before moving to South Africa in 1998, starting Radford Dale with Ben Radford, an Australian. The idea was to produce wines using modern techniques and technology with a healthy respect for tradition, something Alex came to understand well while living in Burgundy.

Bodegas y Viñedos Pardevalles
Pardevalles is recognized for being one of the driving forces behind the D.O Tierra de León, betting on the development of the indigenous grape varieties Prieto Picudo and Albarín Blanco. In 1949 Rafael Alonso founded Pardevalles continuing with the family tradition of growing grapes and making wine. The winemaking tradition in León goes back more than 400 years, famous for its centuries-old caves where wine was originally made.The vineyards of Pardevalles are located between 750 and 820 metres above sea level, in an area with a Continental climate. They grow in poor, rocky alluvial soils which helps maintain the freshness in the wines. Paulo Laureano is one of the most respected Portuguese winemakers and a reference for wines in the Alentejo.
Agronomist, winemaker trained between Portugal, Australia and Spain, after teaching at the University of Évora for 10 years, decided to dedicate himself, exclusively, to what has moved him since 1993: designing wines. Especially in the company he created with his family in 1999 and which has become increasingly important in his life.
Paulo Laureano defines himself as a minimalist winemaker, for whom designing wines is a passion, unveiling their aromas and flavors, evaluating and optimizing the reasons for his identity and personality, promoting them as true sources of pleasure.
His exclusive bet on Portuguese varieties reflects his way of being and looking at wine as a factor of culture and civilization.
Pearce Family Wines
In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.
After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.
