This Prosecco has enticing scents of ripe orchard fruit, aromatic herb and fragrant white spring flower. The generous palate doles out juicy white peach, ripe Granny Smith apple and tangerine zest. Fresh acidity brightens the creamy flavours while an elegant mousse imparts finesse.

Pairing suggestion: This wine is very food-friendly. It goes beautifully with antipasto and spicy Asian foods. In the Veneto region, Prosecco is usually paired with cured meats, which makes it the perfect wine to accompany a cheese and charcuterie board.

Tessari’s golden straw coloured Grisela is the backbone of the vineyard; a delicious entry level wine that is meant to be enjoyed on any occasion. Melba toast, elderflower and chamomile aromatics fill the glass with a notable mineral quality. The taste of crushed seashells dance on your tongue with a fun duo of stone fruit and citrus. The finish is refreshing with balanced acidity.

Pairing suggestion: Grisela is excellent as an aperitif. Perfect with light appetizers, rich Italian seafood, risotto with black squid ink or on its own.

1 bottle x Chateau de la Grange-Barbastre Muscadet Côtes de Grand Lieu Sur Lie 2022 (Loire, France)
White | Melon de Bourgogne

Built in the 15th century, the Château de la Grange-Barbastre belonged to the Barbastre family, Lord of the Grange, until the end of the 16th century. The property passed to the de Goulaine family in 1777. Planted on slopes facing south and southeast, this Muscadet Côtes de Grand Lieu sur Lie is cultivated on the best soils of the estate and from vines that are over 40 years old. Aged on its fine lees for 11 months, the nose is elegant with hints of white flowers, lemon zest, ginger and salty minerality. The contact with the lees for an extended period of time to develop a beautiful creamy texture balanced out by bracing acidity.

Pairing suggestion: Muscadet Sur Lie is an exquisite pairing with oysters or any other type of shellfish. A true classic pairing would be 'moules frites' - mussels tossed in shallots, white wine and herbs with a side of french fries!

1 bottle x Cantina Cenci Anticello Grechetto 2022 (Umbria, Italy)

Once the site of a monastery of the Olivetan order, Giovanni Cenci lives and works his family’s generations- old farm, producing some of the most compelling, complete wines of the region. The family farm spans 30 hectares for grains and grazing, with only 7 hectares planted to ancient clones of Grechetto and other grape varieties

Anticello is made with Grechetto grapes, which are destemmed and left in contact with skins for about an hour before starting fermentation. The grapes are then fermented in stainless steel (80%) and wooden barrels (20%). It ages for 7 months in steel with frequent bâtonnage. On the glass, it has a deep straw yellow colour with golden hues. On the nose, it has aromas of stone fruit, citrus, and wild flowers. The palate is fruity, savoury, fresh, slightly tannic, soft and powerful.

1 bottle x Gilvesy Bohem Balatoni Cuvée 2022 (Lake Balaton, Hungary)
White | Olaszrizling, Pinot Gris, Riesling, Sauvignon Blanc

Gilvesy winery is located in the outskirts of Lake Balaton, near an ancient dormant volcano, in Hungary. Hungarian expat Robert Gilvesy moved back to his homeland from Canada to start this exciting project involving native grape varieties and volcanic soils. This blend is light and fresh. On the nose, it's all about hints of mint, lemon and fresh cucumber, while on the palate it's zesty, with notes of green apple and citrus fruit.

Pairing suggestion: It's delicious when paired with fresh salads dressed with dried fruits such as cranberries and walnuts, grilled fish with potatoes and zesty ceviches.

1 bottle x Pearce Predhomme Pinot Gris Willamette Valley 2022 (Oregon, USA)
White | Pinot Gris

A collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite regions. This Pinot Gris is made from vines planted in Willamette Valley AVA, Oregon. Brilliant straw colour with youthful yet intense aromas of white peach, stone fruit, green apple and citrus. Bright acidity and freshness on the palate with a round mouthfeel but it stays surprisingly refreshing. Distinctly Oregonian; a clean, fresh style of Pinot Gris.

Pairing suggestion: This Pinot Gris is zesty and fresh, and pairs amazingly with sushi, ceviche and even richer meals like fish and chips! It is also beautiful with white meats, such as chicken and turkey.

1 bottle x Mas Carlot Générations Rosé Costières de Nîmes 2023 (Côtes du Rhône, France)
Rosé | Grenache, Syrah, Mourvèdre

Mas Carlot is situated in the south of the Rhône Valley, extending across 76 hectares of pebbly land southeast of Nîmes. This seductive rosé is a traditional blend of Grenache (50%), Syrah (40%) and Mourvèdre (10%). Beautifully pale in colour and soft in texture, this is probably the most fashionable vintage to date. Delicate aromas of raspberry, watermelon, citrus fruits & herbes de Provence flow from the glass. The flavours are fruity, dry and crisp with an elegant balance & structure. This is a serious rose at an accessible price.

Pairing suggestion: Mas Carlot Rosé is the perfect rosé to pair with any meal, including tapas and barbecue. It is also a great wine to enjoy with cheese boards or just on it's own at any time!

1 bottle x 2022 Radford Dale Vinum Pinotage (Stellenbosch, South Africa)
Red | Pinotage

Pinotage is a relative newcomer to Radford Dale (their first release came in 2011), yet the varietal has become an integral part of what they do. Simply put, they are looking for purity of fruit and freshness in our expressions. The grapes for this wine are predominantly from a vineyard located in the northern part of the Stellenbosch region and a quarter of a century old.

Their primary objective with this wine was to wild ferment, importantly leading with carbonic maceration, so as to unlock and reveal the hidden side of Pinotage. This whole berry, natural fermentation took place in open-top, 600L oak demi-muids, for a very soft extraction of colour, flavour and tannin. No new oak was used as they wanted the wine to exhibit its freshness while adding texture and complexity.

Pairing suggestion: Raspberry and redcurrant fruit aromas with both intensity and freshness. The palate is bright, vibrant, focused with wild cherry and plum fruit complemented by savoury herbs and spices.  You can tell this wine has been made in the vineyard and guided with a most gentle hand in the cellar. It shows purity, freshness with superb drinkability and balance.

1 bottle x Stéphane Aviron Chénas AOP 2021 (Beaujolais, France)
Red | Gamay

The Stéphane Aviron Chénas is produced very vines that average over 100 years old, ranging in plantation from 1900 to 1923. Stéphane Aviron has been producing wines from this incredible 13.6-acre parcel since 1993. The soil is light and made up mostly of sand and small pebbles over a layer of clay and quartz. The old vines and poor soils combine for incredibly low yields and highly concentrated grapes.

Stéphane Aviron strives for a style that is elegant and fine in the Chénas without too much concentration. The wine is very drinkable. With his subtle approach to winemaking, the terroir is able to express itself very clearly and precisely. Dark black cherry colour with purple. Deep, ripe aromas of black cherry with a hint of black pepper. Very good weight; fleshy and round, very soft and harmonious. Delicious now or could be aged for several years.

1 bottle x Cortonesi 'La Mannella' Lèonus IGT Toscana 2022 (Tuscany, Italy)

The Cortonesi family has owned the La Mannella farm in Montalcino for decades and are devoted to the production of Brunello di Montalcino. This wine, Lèonus, is a humble but mighty Toscana IGT made from grapes that are in fact grapes cultivated to be Brunello, from vineyards in Montalcino. It is one of the best value wines from the area. ​This Rosso Toscano is juicy and fresh. Full of red cherries and dark berries on the nose, with a delicate astringency on the palate. It has such a great balance and it drinks so well that it's the perfect everyday wine.

Pairing suggestion: This wine pairs brilliantly with dishes prepared with tomato sauce and herbs, such as lasagna or pizza. It's also great with antipasti (olives, cured meats, pecorino cheese), and simply roasted meats or chicken.

1 bottle x Château Les Paruades Macau en Médoc Bordeaux Supérieur 2020 (Bordeaux, France)
Red | Cabernet Franc, Cabernet Sauvignon, Merlot

Château Les Paruades is located in Macau en Médoc, on the foothills of the Margaux appellation and on the edge of the Gironde. The estate covers an area of 3.5 hectares with Merlot, Cabernet Sauvignon and Cabernet Franc planted on clayey palus soil.  The vinification process follows the traditional methods of the Médoc, with total destemming and fermentation in stainless steel and concrete vats. 

A blend of merlot, cabernet sauvignon and cabernet franc in Pomerol mimic, attractive and edgy when it wants or needs to be. Right Bank stylistic in any case, herbals and amaro welling through with liqueur consistency and fashion. Quite chic and notably concentrated, really credible, with brisk acidity and plenty of toughness keeping the wine safe, elongated and with portents of further potential. Quite a steal actually.

1 bottle x Rue Naujac Cabernet Sauvignon Lot 33 Columbia Valley 2020 (Washington, USA)
Red | Cabernet Sauvignon

Bold and full-bodied, with balance and complexity. Showing aromas of black and red fruits, toasted herbs, graphite and leather. A mouthful of ripe dark fruit consisting of blackberry and black currant combined with notes of spice and dark chocolate. A fruit-forward finish offering a balanced and integrated tannin structure. This Cab is a blend of two different vineyards, one in Wahluke Slope AVA; the other in Horse Heaven Hills AVA.

Pairing suggestion: pair with BBQ meats, rich stews or steak.

 

About the Winery

Azienda Agricola Tessari

The Tessari family have Soave in their blood. For three generations they have been extracting delectable wine from the well cared for vines of their Monteforte d’Alpone vineyards. With only a little over a hectare of Garganega grapes in the prestigious volcanic solis of Soave Classico, Antonio Tessari hand dug his cellar back in 1933 and started the legacy that continues today with his grandchildren: Germano, Antonio and Cornelia.

From vineyard to bottle, these three siblings oversee it all; with unwavering respect for tradition, quality and passion for the art of winemaking. The volcanic soils of the hillside are rich with basaltic rocks and clays, which guarantees the health of the plant and the promotes the mineral and floral aromas that are characteristic of the Garganega grape. Truly artisanal wine making at it’s best.

Conti Riccati

Conti Riccati is located in the rolling hills outside of Castelfranco, Veneto; in the province of Treviso. Their vineyards extend along 20 hectares inside a bigger property that has belonged to the Riccati family since the 14th century.
Valperto Azzoni, his wife along and their four children are the direct descendants of the Riccati family and have the same enthusiasm and respect for the land, that their ancestors had in the past.

Conti Riccati grows mostly Glera, Pinot Gris and Pinot Noir though they are most known for their Prosecco.
​The winemaker, Salvatore Lovo and the agronomist, Giovanni Pascarella take great pride in making the wines and tending the vineyards for the family. They practice sustainable viticulture and are currently in organic conversion.

Mas Carlot

Mas Carlot is situated in the south of the Rhône Valley, extending across 76 hectares of pebbly land southeast of Nîmes. Originally a 17th century farm, this beautiful estate was resurrected in the 1960's by the Blanc family—it is currently run Cyril Mares of the neighbouring and equally reputable property, Mas Bressades.


The appellation of Costières de Nîmes used to be considered part of eastern Languedoc but the climate, soil, topography and wine are far closer to those just over the river in the Southern Côtes du Rhône. It is now a region very much on the up and is widely recognized as a great source of excellent value wine.

Pearce Predhomme

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.

Radford Dale

Radford Dale and The Winery of Good Hope are two brands made by the same people, in the same winery. The team behind these wineries has been an industry leader since the 1990s in chemical free farming, and more recently in low and no sulfur winemaking. They are a founding member of PIWOSA (Premium Independent Wineries of South Africa) which sets ethical, environmental and social uplift standards. Recognizing the social inequality present in South Africa Radford Dale has also set up a trust called Land of Hope to help facilitate bright futures for children, focusing heavily on education.

Alex Dale who owns and manages both projects is an Englishman who grew up spending summers in Burgundy, France. He moved there in his late teens to follow a passion for winemaking and also opened a wine bar in Beaune. He lived in Burgundy for many years before moving to South Africa in 1998, starting Radford Dale with Ben Radford, an Australian. The idea was to produce wines using modern techniques and technology with a healthy respect for tradition, something Alex came to understand well while living in Burgundy.

Wines are made with minimal intervention in order to best express each vineyard’s individuality.
