A true expression of Oregon Pinot Noir! A vibrant, complex nose opens with floral, stone fruit and berry aromas - rose petal, violet, pomegranate, plum cherry, raspberry, black currant, boysenberry - that deepen with spice and wood notes - cinnamon, white pepper, thyme, vanilla, cedar, sandalwood, chocolate. Gentle oak aging adds definition supporting a delicious, harmonious balance between tannin, acid and fruit.

A pretty, versatile wine that will pair neatly with many different proteins, from salmon to pork to duck to venison, as well as earthy, rustic vegetables, and bright-red to black fruits like cherry, cranberry, or plum.

Hyland Estates, a defining presence in Oregon winemaking since 1971, stands as a testament to the enduring legacy of the Willamette Valley. Nestled in red volcanic Jory soil near the Van Duzer Corridor, its 51-year-old, self-rooted vines remain untouched and steadfast, embodying a "land not hand" philosophy championed by owner and winemaker Laurent Montalieu. By allowing the vineyard to remain wild and untamed, each block, elevation, and growing season shines through in the wines, producing richly textured, concentrated expressions of the land. Every bottle from Hyland tells a unique story—sometimes shy, sometimes bold—capturing the spirit of the vineyard and the vision of a winemaker who honours its timeless character.

The Estate Pinot showcases a vibrant bouquet of red cherries, layered with spicy undertones, black tea, and fragrant herbal notes. The palate is equally dynamic, offering a blend of ripe blackcurrants, plum, and a touch of peppery spice. Fine-grained tannins provide structure, while a fresh mid-palate keeps it lively. The finish reveals subtle hints of wild bramble and baking spices, leaving a lasting and elegant impression.

This wine is shines next to one of man’s favourite foods: bacon. We recommend either bacon wrapped scallops or a bacon wrapped Filet Mignon.

A to Z Wineworks was started in 2002 by Oregon wine industry veterans: Deb Hatcher (Eyrie), Bill Hatcher (Domaine Drouhin Oregon), Sam Tannahill (Archery Summit) and Cheryl Francis (Chehalem). The two couples worked in the Hatcher's kitchen to build the original blend, which was honoured by Food & Wine magazine as the Best American Pinot Noir under $20. The Essence of Oregon Pinot Noir is comprised of superior vineyard blocks carefully selected and blended to craft a special cuvée distinctive for deep flavours and rich texture. In vintages when Essence is made, it is only a tiny portion of A to Z’s production, offering great value for an outstanding Pinot Noir.

A fragrant symphony of sandalwood, cinnamon, and exotic spices greets the nose, unfolding into a rich medley of dried and fresh fruits—orange peel, cherry, pomegranate, raspberry, and plum—layered with hints of dried flowers, anise, vanilla, and nutmeg. Savoury notes of milk chocolate, marshmallow, sweet tobacco, and marionberry jam add depth, while a touch of French oak lends elegance. On the palate, gentle tannins and bright acidity create a balanced, complex wine with a soft, luxurious finish, sure to be an undeniable crowd-pleaser.
