The Crater Rim is a family-owned boutique winery situated in the rolling hills of Waipara, in the South Island of New Zealand. They produce sustainably crafted, terroir-driven wines from carefully selected sites well-suited to the varietals they cultivate. The first vintage produced by The Crater Rim was from a small hillside vineyard, high above the town of Akaroa on Banks Peninsula – and so the brand ‘The Crater Rim’ was born. 

Winemaker and Viticulturist Haydon Good strives to make wines of character and quality through a watchful, non-interventionist style. He uses a combination of new and traditional techniques and technology to allow the fruit to become wine. Haydon focuses on allowing the vineyard character to shine through in every bottle produced. 

Opening with an enticing bouquet of dark cherry and seasoned plums, followed by delicate hints of truffle and fragrant spices. On the palate, it's both soft and substantial, with plush, mouth-coating fruit and a seamless, velvety texture. The finish is long and savoury, with impressive persistence, perfectly balancing richness and finesse.

Pour alongside bacon-wrapped pork tenderloin with prune and apple stuffing.
