As a small-batch boutique winery, Adamo Estate uses the best fruit from their estate and some of the top growers in Ontario. They blanket their vines in the winter to protect them from the cold, they weed and pick by hand, and they crush and bottle on site.

Adamo is an ambitious project in the Hockley Valley (actually on a hilltop) near Orangeville, and as their own vines mature winemaker Shauna White is sourcing from prime sites in Niagara, like the Parke Vineyard on Twenty Mile Bench. This pours pale garnet. The nose is nicely lifted and complex with wood smoke curling around classic sour cherry, cinnamon and vanillin. It's light to mid-weight, very smooth with very refined tannin. There is a tart and sour streak with lurking volatility but it squeaks under my normally low bar, and flavour intensity and length are excellent. Well priced for premium Niagara pinot.

Pairs well with duck breast or roast goose dishes.
