3 bottles x Viñátigo Listán Blanco de Canarias 2022 (Tenerife, Canary Islands)
White | Listán Blanco de Canarias

The grape Listán Blanco de Canarias was brought to the Canary Islands in the 18th century by the Andalusian conquers. Viñátigo cultivates it in the high-lands that sit at 500 meters of altitude. The vines are trained in ‘parrales’, a training method inherited by the Portuguese community that settled on the northern part of the island back in the 15th century. These vertical structures adapt to the hills and ravines created by the last eruptions of Teide volcano towards the north of the island. This wine is very fresh and has a vibrant acidity. On the nose, it has fragrant aromas of fennel, dried fruits and fig tree leaves; as well as a distinct mineral quality that is a result of the volcanic soils.

Pairing suggestion: This crisp white calls for grilled fish, potatoes and 'mojo verde', a typical sauce from the Islands made of garlic, cilantro and olive oil.

3 bottles x Tessari Grisela Soave Classico DOC 2022 (Veneto, Italy)
White | Garganega

Tessari’s golden straw coloured Grisela is the backbone of the vineyard; a delicious entry level wine that is meant to be enjoyed on any occasion. Melba toast, elderflower and chamomile aromatics fill the glass with a notable mineral quality. The taste of crushed seashells dance on your tongue with a fun duo of stone fruit and citrus. The finish is refreshing with balanced acidity.

Pairing suggestion: Grisela is excellent as an aperitif and for accompanying rich Italian seafood recipes and risottos.

3 bottles x Viñátigo Negramoll 2022 (Tenerife, Canary Islands)
Red | Negramoll

Negramoll is Canary Island's most delicate red variety. It's thin skin and big berries yield wines that are light bodied but have very powerful aromatics. The ungrafted vines grow near the Ocean, around 300 meters above sea level. The wine is aged for six months in neutral barrels. The delicate aromas of red berry fruits are accompanied by an intriguing wisp of toffee and a powerful yet subtle volcanic minerality. A smooth and rounded palate shows polished tannins and a gentle, pleasant finish.

Pairing suggestion: Pair with grilled fish and white meats.

3 bottles x Pearce Predhomme Pinot Noir Willamette Valley 2022 (Oregon, USA)
Red | Pinot Noir

While labeled as Willamette Valley, nearly all of the wine from this bottling came from the Dundee Hills AVA. Located 28 miles southwest of Portland, the Dundee Hills AVA encompasses 6,490 acres with geology dating back 15 million years when lava owed from northeast Oregon and pushed into the Willamette Valley, covering all but the highest hills with up to 1,000 feet of basalt. An ideal climate combined with ancient, complex Jory soil produces wines that show pure fruit, bright acidity, intense depth, and a classic balance.

Pairing suggestion: Pinot Noir is very versatile to pair. This wine will go well with fish like salmon and is also delicious with duck confit and other roast meats and mushrooms.

About the Winery

Azienda Agricola Tessari

The Tessari family have Soave in their blood. For three generations they have been extracting delectable wine from the well cared for vines of their Monteforte d’Alpone vineyards. With only a little over a hectare of Garganega grapes in the prestigious volcanic solis of Soave Classico, Antonio Tessari hand dug his cellar back in 1933 and started the legacy that continues today with his grandchildren: Germano, Antonio and Cornelia.

From vineyard to bottle, these three siblings oversee it all; with unwavering respect for tradition, quality and passion for the art of winemaking. The volcanic soils of the hillside are rich with basaltic rocks and clays, which guarantees the health of the plant and the promotes the mineral and floral aromas that are characteristic of the Garganega grape. Truly artisanal wine making at it’s best.

Pearce Predhomme

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.

Viñátigo

Juan Jesús is a proud native of Tenerife and the fourth generation of growers. During the thirty years that he's overseen Bodegas Viñátigo, he has considerably increased its holdings, planting varieties that he and his team recuperated from near extinction.

Driven by passion and love for his homeland, Juan decided to revive and work to save the native grape varieties that were brought to the Canary Islands by the conquers back in the 15th century and that had survived on the islands for centuries. He is a hero of contemporary Canarian viticulture. The wealth of knowledge that his work has created has helped underpin the significant expansion of wine styles that are now available throughout the archipelago, and his wines have achieved a calibre of class that many doubted the Canaries would ever produce again.
