About the Winery

Maison Arnaud Baillot

Arnaud Baillot is a young winemaker based in Beaune, in the heart of the Côte de Beaune. Owner and winemaker, he has been working with lutte raisonnée since 2014 and supplements his Domaine with judicious grape purchases.

As a winemaker, he is passionate about the diversity of wine profiles Burgundy has to offer. So he teams up with Laure Hudelot-Noellat, his wife and granddaughter from the eponymous Domaine, based in Chambolle-Musigny. Together, they produce a comprehensive range of wines, from regional appellation to Grand Cru. Arnaud is very keen to get the best out of every stage of the process, which means he selects the origin of his grapes with the utmost care. He oversees the entire winemaking process, carefully selects his barrels according to the nuances he wishes to bring (wood origin, cooper, toasting, grain, etc.) and finally applies his own ageing policy according to the cuvées... nothing is left to chance, because the treasures a terroir brings are to be earned!

More going here than I expected from 'basic' Bourgogne. This is a nicely balanced, fairly rich and complete chardonnay, with complex aromas of peach, sunflower seed, subtle sourdough and fine oak vanillin and brown spice. It is medium bodied, fairly cushy and soft, with very good flavour focus and intensity. A touch of C02 enlivens the palate. The length is excellent. Almost sumptuous. Tasted August 2026

Quite straightforward, unadorned and classic chardonnay in the softer and smooth, notably regional Beaune style. The work of Arnaud Baillot, along with his wife Laure, grand-daughter of the founder of Domaine Hudelot-Noëllat in Chambolle-Musigny. Drink 2026-2029. Tasted August 2026.

This is a fairly classic Beaune chardonnay, bracketed by toasted bread notes, whilst flavours of ripe orchard and citrus fruit sit in the centre. The palate is medium bodied and fleshy, with tart, lemony acidity. The length is very good, with a citrus and toast-infused finished. Clean, familiar, and well-made, this chardonnay is best enjoyed over the next 2-3 years. Tasted August 2026.
