Delivery timeline:
It requires four full cases of each wine in order for us to build and fulfill four mixed cases. This process usually takes about 7-10 business days but may vary.

3 bottles x Pearce Predhomme Chenin Blanc 2023 (Stellenbosch, South Africa)
White | Chenin Blanc

A collaboration between Nicholas Pearce and Will Predhomme to create wines from their favourite regions. This Chenin is made from old bush vines grown in decomposed granite/quartz on the Helderburg (Clear Mountain), in the southwestern-most corner of Stellenbosch.

Behold, Chenin Blanc! The most widely planted varietal in South Africa simply shines in this charming expression from Stellenbosch. Sourced from old vines and naturally fermented, expect elegant notes of white peach, lemon and tangerine with an underlying layer of crisp yellow apple. Bright and fresh on the palate, but with good depth and concentration, this wine is ready to drink now but will also cellar nicely for the next 2-3 years.

 Pairing suggestion: This Chenin Blanc pairs perfectly with all kinds of fresh seafood; and also with tartare. Smoked salmon or trout would also be delicious next to a glass of this old vines Chenin. Its rich texture makes it suitable to be paired with goat cheese, roast chicken and butternut squash.

3 bottles x Pardevalles Rosado Prieto Picudo (Tierra de León, Spain)
Rose | Prieto Picudo

Pardevalles is recognized for being one of the driving forces behind the D.O Tierra de León, betting on the development of the indigenous grape varieties Prieto Picudo and Albarín Blanco.

This 100% Prieto Picudo rosé is intense and fresh on the nose.  Rich and hypnotizing aromas of raspberry, strawberry, herbs, citrus and red rose petals jump out of the glass.  These flavours follow through on the palate, which is both powerful and flavourful, while maintaining great freshness.

Pairing suggestion: A charcuterie board, a Thanksgiving bird, and some lovely cranberry sauce would be perfect here, as well as enjoying as an aperitif.

3 bottles x Clos du Château de Parnay Saumur Champigny 2019 (Loire Valley, France)

Red | Cabernet Franc

Located along the Loire river on the most reputable clay and limestone terroir of Saumur-Champigny appellation, Château de Parnay has been producing outstanding wines for more than two centuries.

This wine is made from old vine Cabernet Franc and it shows with beautiful notes of ripe red fruits, mint and spices. The palate is structured, silky and very well balanced. The length is exceptional.

Pairing suggestion: grilled white meat, meaty stews, bœuf bourguignon, casseroles, and more) stuffed vegetables, cold meats, soft cheeses. 

3 bottles x Paulo Laureano Vinhas Velhas Tinto 2020 (Alentejo, Portugal)
Red | Alicante Bouschet, Aragonez, Trincadeira

Paulo Laureano is one of the most respected Portuguese winemakers and a reference for wines in the Alentejo region. Agronomist and oenologist, trained between Portugal, Australia, and Spain, after teaching at the University of Évora for 10 years, he decided to dedicate himself exclusively to what has moved him since 2003, making wine.

As the name indicates, this wine is made with old vines of Portuguese native varieties such as Aragonez, Trincadeira and Alicante Bouschet. The grapes ferment in stainless steel vats and aged for 12 months in new and used French oak barrels.

It shows a generous, rounded nose of brambly/blackberry jam, perfumed florality, some oak vanilla and nutmeg. It is medium-full bodied, soft, genteel and warming with fine chalk tannin. Some minerality on the finish. The length is very good to excellent.

 Pairing suggestion: Pair this wine with smoked meats or coq au vin.

About the Winery

Bodegas y Viñedos Pardevalles

Pardevalles is recognized for being one of the driving forces behind the D.O Tierra de León, betting on the development of the indigenous grape varieties Prieto Picudo and Albarín Blanco. In 1949 Rafael Alonso founded Pardevalles continuing with the family tradition of growing grapes and making wine. The winemaking tradition in León goes back more than 400 years, famous for its centuries-old caves where wine was originally made.

The vineyards of Pardevalles are located between 750 and 820 metres above sea level, in an area with a Continental climate. They grow in poor, rocky alluvial soils which helps maintain the freshness in the wines. The philosophy of the Estate is grounded in making wines which express the character and identity of their origin, with a deep respect for the earth and the indigenous varieties of grape, combining tradition, innovation, and hard work.

Château de Parnay

Château de Parnay is the flagship of the AOC Saumur Champigny. The property is located along the Loire river, classified as UNESCO World Heritage, on the most reputable clay and limestone terroirs of the appellation. The historic property was taken over by Mathias Levron & Régis Vincenot in 2006 with the aim of restoring the nobility of this special place.

Drawing their strength from the authenticity of their values, they now cultivate 50 hectares of vines with the aim of producing exceptional wines in a way that respects the environment. They have been certified organic since 2013 and are about to be certified biodynamic too.

The Clos of Chemin des Murs is the jewel of the property! Coming from the imagination of it's orginal owner, Antoine Cristal, this Clos was built, planted and cultivated according to an unprecedented technique. On this half hectare of Chenin Blanc, each vine was planted on the north face of a stone wall. Through a hole in the stone the vine crosses through the wall and allowing the grapes to grow facing the southern sunshine. The vine is said to have its 'foot in the cool and belly in the sun'.

Paulo Laureano

Paulo Laureano is one of the most respected Portuguese winemakers and a reference for wines in the Alentejo.

Agronomist, winemaker trained between Portugal, Australia and Spain, after teaching at the University of Évora for 10 years, decided to dedicate himself, exclusively, to what has moved him since 1993: designing wines. Especially in the company he created with his family in 1999 and which has become increasingly important in his life.

Paulo Laureano defines himself as a minimalist winemaker, for whom designing wines is a passion, unveiling their aromas and flavors, evaluating and optimizing the reasons for his identity and personality, promoting them as true sources of pleasure.

His exclusive bet on Portuguese varieties reflects his way of being and looking at wine as a factor of culture and civilization.

Pearce Family Wines

In the early 2000's Nicholas Pearce was exposed to the garagiste movement in Bordeaux and was particularly inspired by négociants like Jean Luc Thunevin (Saint Emilion), James Sichel (Margaux) and Nicolas Potel (Beaune) from Burgundy.

After returning home to Ontario and starting his own wine company, he has had a hand in making 10+ wines in two hemispheres, 3 countries and 5 different appellations since the 2013 vintage.

Pearce Predhomme

Pearce Predhomme is a collaboration of like-minded individuals from around the globe. Founded with a mission to build and import wines from our favourite appellations while offering an unequaled value/quality ratio for the sommeliers & wine buyers in Ontario. This is a project between Toronto Sommelier and entrepreneur Will Predhomme and Ontario wine importer Nicholas Pearce they have partnered with Radford Dale in South Africa and NorthWest Wine Co. in Oregon to create these special cuvées.
