Juan Jesús, who is a 4th generation winemaker, founded Viñátigo in 1990 and has worked tirelessly since then identifying, recuperating the native grapes of the Canary Islands.
Baboso Negro is a grape variety that Juan Jesus found in the island of El Hierro in the early 2000's. He recuperated it with a micro-winery he established on the island, and in 2006, he planted a small plot in Tenerife. The Baboso Negro's clusters are very small and delicate, but yield very complex and full-bodied wines. On the nose, Baboso Negro develops aromas of delicate violet flowers, dark chocolate and balsamic notes. On the palate, it has a big and bold structure.
